Big Swerve’s BBQ is hitting the road with a new concept and this time, jerk chicken is taking center stage.
The popular Westville barbecue spot has announced the launch of Big Swerve’s Express, a new food truck built around one of the restaurant’s fan-favorite flavors: jerk chicken.
It’s another step forward for Stephen “Big Swerve” Clark and his wife Darlene, who have steadily grown Big Swerve’s from backyard barbecue into one of South Jersey’s most recognizable independent BBQ businesses.
The couple started cooking for family and friends in 2020 before taking their barbecue on the road with a food truck. That eventually led to their brick-and-mortar restaurant at 201 Broadway in Westville, along with catering and Stella’s Banquet Hall & Cafe.
Big Swerve’s Goes Express
The new Big Swerve’s Express truck gives the business another way to get its food out into the community, but with a more focused concept highlighting jerk chicken.
Jerk chicken has already earned a following at Big Swerve’s. The Westville restaurant features jerk chicken sliders among its signature offerings, bringing a little Jamaican-inspired heat to the Southern-style barbecue menu.
For a business known for brisket, ribs, pulled pork and smoked meats, an Express truck centered around jerk chicken makes plenty of sense. It allows Big Swerve’s to take one of its popular specialties and build a mobile concept around it while the original Westville operation continues doing what it does best.
And Big Swerve’s certainly isn’t new to life on wheels. A mobile operation was an important part of the business long before the restaurant opened, helping Stephen and Darlene build their following throughout South Jersey.
From the Backyard to a Growing South Jersey Brand
Big Swerve’s is one of those South Jersey food scene stories that has been fun to watch develop.
What began as Stephen tending smokers in the backyard has grown into a restaurant, catering operation, banquet space and food trucks. Through all that growth, the business has remained very much a husband-and-wife operation: Stephen handles the meats while many of the sides come from Darlene’s recipes.
Now, Big Swerve’s BBQ Express adds another chapter to the story.
The new concept also gives Big Swerve’s more flexibility to pop up at events and locations around the region while introducing even more people to that jerk chicken.
