Seaview Hotel Announces Seafood-Centric Charity Dinner with Guest Chef Mike Stollenwerk of Two Fish

Seaview, A Dolce Hotelthe New Jersey Shore’s quintessential seaside resort located just outside Atlantic City and an hour drive from Philadelphia, will invite seafood master Michael Stollenwerk, Chef and Co-Owner of Two Fish BYOB in Medford to its Oval Room on Saturday, August 26 from 6-9 pm for a collaboration dinner with Seaview Executive Chef Rodolfo Correa.

A percentage of proceeds from the evening will be donated to Jetty Rock Foundation, a local non-profit dedicated to protecting the oceans and waterways and the people who build their lives around them.


The five-course seafood-forward charity dinner will be hosted in Seaview Hotel’s historic Oval Room, a beautiful, rounded banquet room which once served as a ballroom for princess Grace Kelly’s 16th birthday. Guests will be greeted with a welcome cocktail on the Oval Room’s adjoining patio overlooking Seaview’s lush Bay Course and Atlantic City skyline. The evening will continue with a guided dinner with remarks from both Chef Michael Stollenwerk and Chef Rodolfo Correa. Tickets are $150/person and can be purchased here.

“It was an honor to collaborate with Chef Mike Stollenwerk on this menu,” said Chef Rodolfo Correa. “He’s one of the Greater Philadelphia and South Jersey’s most celebrated seafood chefs and I’m so excited to get in the kitchen with him to give seafood lovers a taste of the Jersey Shore while supporting a cause that’s so unbelievably important.”

Cucumber, Lemon Oil, Everything Spice

2nd Course
Butter Poached Lobster & Golden Beet Salad
Truffle, Arugula, Lemon-Herb Vinaigrette

3rd Course
Spanish Octopus
Smoked Potato, Pickled Poblano, Poached Egg Vinaigrette

4th Course
Alaskan Halibut
Flageolet Bean, Jersey Corn, Pancetta, Roasted Garlic Puree, Tomato Jam

5th Course
Key Lime Trifle
Graham Cracker Crumble, Macerated Berries, Fresh Cream

An optional five-wine pairing will be available for $42. À la carte non-alcoholic and alcoholic beverages will also be available for purchase.

The Jetty Rock Foundation will be onsite for the dinner with additional information and donation opportunities to help support the oceans and waterways along the Jersey Shore and beyond.

This chef collaboration is the first in a series of charitable dinners at Seaview this fall, including the next installment with husband-wife duo Kiki Aranita of Poi Dog, Hawaiian-inspired at-home sauces, and Ari Miller of acclaimed Philadelphia restaurant Musi, on Saturday, September 23.
