Tabatha Griffith opened Tesoro Macaron Company’s first location in Swedesboro in July 2022. In March 2024, she opened her second location in Collingswood. We’ll get to that in a bit. First, what are macarons?
Due to their elegance, these petite French cookies are usually sought after for special occasions, celebrations, and events. Macarons are often considered luxury desserts, but they’ve become trendy in America and are now frequently enjoyed anytime for any reason.
According to Wikipedia, macarons are a sweet meringue-based confection made with whipped egg whites, icing sugar, granulated sugar, almond meal, and often food coloring. Their unique look and texture set them apart from other cookies and confections.
Macarons come in many shapes, sizes, and flavors, but the traditional macaron typically looks like this:
Macarons are not easy to make, and learning how to make them can take much trial and error. The whole unique preparation process is notoriously finicky, and many external factors make it challenging to get them just right. But when they are just right, they’re fabulous!
Because of the tricky process, they cost a little more. But they are always worth it!
How Sweet It Is: Macrons in South Jersey
Tesoro’s coveted macarons (and other baked goods) are a South Jersey Food Scene Facebook group favorite. Tabatha Griffith turned what used to be a hobby, baking on the side for others, into a full-time career and small business. She’s built a local macaron empire with her sweet passion and unbridled entrepreneurial spirit!
While there are a few other places to get macarons in South Jersey, Tabatha keeps very busy selling her spectacular macarons and desserts at both locations. They are all handmade, too. There is no mass production here. She bakes and fills every single macaron by hand!

TMC also offers wholesale macarons. These confections are sold at places like Chloe’s Creampuff’s in Pitman and, seasonally, at George’s Candy in Ocean City.
TMC offers macarons, cupcakes, cookies, cookie cakes, and browned butter Rice Krispies at both locations. Inventory may vary, so you should call and/or order ahead if you want something specific.
