On Friday evening, I checked out my little town of Merchantville’s First Friday Market. I posted about this a few weeks ago. I’m very excited that they are starting to organize more events in town with the purpose of bringing the community together. Naturally, I’m keen on the fact that they will be featuring different food trucks, too.

This past Friday night was the very first one and among the food trucks that showed up is The Fabulous Fig: A Plant-Based Food Truck which is owned and operated by Haddon Township-based Terri Sacchetti. She left a full-time job in 2017 as a Licensed Professional Counselor to follow her dream of running a food truck.

Initially, she was helping run this converted ambulance as a hot dog lunch truck in Philadelphia called “Ambulunch” to learn the in’s and out’s of how a food truck is run. After about a year, she felt comfortable to take it on herself. She completely re-branded the truck to coincide with her own plant-based lifestyle and The Fabulous Fig Plant-Based Food Truck was born. This beautifully designed truck was wrapped by Steve Mesa of Pennsauken based Mesa Signs.

Terri explains,

The food is 100% plant-based and Vegan using approachable ingredients that are recognizable and familiar to plant-based and non-plant-based eaters.

Her goal is to serve food that tastes fabulous while nourishing the body and soul and, most importantly, encouraging compassion and quality of life for all beings. Her motto is “Respect for All Life” which reflects her dedication to animal rights.

She is also committed to using all biodegradable serving containers, utensils, and composting all viable food waste. What’s not to love about that?

It was a pleasure to meet her on Friday night. We had a nice long chat before the market truly got kicked off. I sampled the Falafel Bowl which was an herbaceous bowl packed with three homemade falafel balls, mixed greens, pickled red onions, jalapenos, and tahini sauce topped with cilantro.

I highly recommend checking out The Fabulous Fig regardless of if you are a plant-based eater or not. The food is delicious and healthy, which is sometimes hard to find at food truck events.
